Fermentation softens the rhubarb, and, at the same time, releases its own flavour, creating a rhubarb infused honey. Spoon on top of thick yogurt or granola for breakfast. Can also be enjoyed with ricotta and even with some oily fish like mackerel (winning combination for us).
