Artichoke (Jerusalem)

Knobby sunflower tuber, nutty flavor, sweet when roasted.

Jerusalem artichokes, also known as sunchokes, are knobbly root vegetables from the sunflower family. Despite their name, they are neither from Jerusalem nor related to globe artichokes. Native to North America, they have a crisp texture and a sweet, nutty flavor similar to water chestnuts when raw, or potatoes when cooked. They can be roasted, mashed, or added to soups. Jerusalem artichokes are rich in fiber, especially inulin, which supports digestive health. 🌻🥔
